Go, Nick!

This afternoon, I was in the mood for some fall baking!  I pulled out an old pumpkin chocolate chip recipe which initially came from here many years ago.

This is such a simple recipe, and is a really great fall staple.

I cut the recipe in half since only two of us live here, and a whole batch would’ve led to way too much cookie consumption this week!

The Recipe

1 1/4 c flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp nutmeg

1/2 tsp cinnamon

1/4 tsp salt

1/2 stick unsalted butter

3/4 c sugar

1/2 c canned pumpkin

1/2 egg, beaten

1/2 tsp vanilla extract

3 oz (approx) chocolate chips

Sift together the dry ingredients and set aside; do the same with the wet ingredients.

Cream together butter and sugar using a stand mixer (OK, you don’t have to use a stand mixer but this was so much easier than my little old hand mixer!).

Add the wet ingredients and mix until combined.

Once combined, gradually add dry ingredients.  Fold in chocolate chips with a rubber spatula.

Scoop by the rounded spoonful onto a baking sheet.

And bake at 350 for 13-15 minutes until done.

I can’t wait for dessert tonight!  These cookies have a bit of a muffiny texture, so they are great for breakfast as well 😉


As I mentioned in a previous post, Nick is running the Detroit marathon this weekend.  This will be his first big race that I am spectating from afar.  So, to give him a little boost of confidence and energy from way over here in Chicago, the pets and I got to work on some motivational signs today!  Enjoy 🙂
